Yukon or yellow flesh potatoes are a good source of vitamin A. The peels are rich in potassium, so it's healthiest to scrub them gently and leave the peels on when cooking. Store in a cool, dark, dry, well-ventilated place. They should not be refrigerated and should not be exposed to direct sunlight, which turns them green and makes them bitter.
